Twelve Days of Cookies - Day 4

On the fourth day of Christmas, my true love baked for me….

…Snowballs made with espresso coffee…

Chocolate Espresso Snowballs

Chocolate and coffee…a marriage made in heaven!

These little morsels are more buttery than sweet, and the hint of coffee flavour merely enhances the chocolate. Once you pop one in your mouth, you won’t be able to stop!!

Ingredients

1 cup unsalted butter

1/2 cup sugar

1-3/4 cup flour

1/2 tsp salt

1/4 cup unsweetened cocoa powder

2 tsp instant espresso powder

2 tsp vanilla

Confectioners sugar for coating

Preheat oven to 325F. Line baking sheets with parchment paper and set aside.

In a bowl sift the flour, salt, cocoa and espresso powder and set aside.

Cream butter, sugar and vanilla until smooth. Slowly add the flour mixture and stir until well blended. Cover and refrigerate for an hour.

Using a teaspoon, portion out the dough and roll into balls. Place about 2 inches apart on cookie sheets. Bake for about 13-15 minutes. Cookies should look dry on top when done. Allow to cool on cookie sheets before rolling in confectioners sugar.
