On the fifth day of Christmas, my true love baked for me…

….Five Spicy Cookies

Chocolate Fireballs

Ok, don’t let the name scare you. Although these cookies are called Fireballs, they aren’t actually that spicy…unless you want them to be, nor are they balls. You can easily control the amount of heat you want added to them, and the cookies, made of basic cookie dough, spread as they bake. Hence, they take on the shape of your average cookie, not rounded balls. Let’s face it though, Fireballs sounds a lot more dramatic than Chocolate Cayenne Cookies or Diablo Cookies, which they sometimes go by as well. If you like the combination of spicy and sweet (which I do) then these cookies are for you!

Ingredients

1 1/2 cups flour

1 cup unsweetened cocoa powder

1 tsp baking soda

1/4 to 1 tsp cayenne pepper (depending on how spicy you like it)

1 tsp cinnamon

1 cup chocolate chips

2 eggs

1 cup coconut palm sugar (or brown sugar)

1/2 cup vegetable oil

1 Tablespoon vanilla

Maldon salt for sprinkling

Preheat oven to 375F. Line baking sheets with parchment paper and set aside.

Sift flour, cocoa, cayenne pepper, cinnamon and baking soda and set aside.

Beat eggs with both sugars, oil and vanilla until well blended. Slowly add four mixture and mix until thoroughly combined. Stir in chocolate chips. Place teaspoon size amounts 2 inches apart on cookie sheet. Slightly flatten and sprinkle with Maldon salt. Bake for 10-13 minutes or until tops start to crack. Cool on wire rack.
