Coconut Cluster Cookie

Everyone in my family is nuts for coconuts. Though summer usually comes to mind when thinking of this tropical taste, coconut is a slice of heaven in the middle of a frosty winter. These cookies are chewy, full of flavour and are extremely easy and quick to make.

Ingredients

1-1/4 cups flour

1/2 cup butter

1/2 tsp baking soda

1/4 tsp salt

1/2 cup coconut palm sugar (or brown sugar)

1/2 cup white sugar

1 egg

1/2 tsp vanilla

1-1/4 cups flaked coconut

Chocolate for drizzling (optional)

Preheat oven to 350F. Line cookie pans with parchment paper and set aside.

In a bowl combine flour, baking soda, salt and set aside.

Cream butter with both sugars until smooth. Add egg and vanilla and beat until fluffy. Mix in the flour mixture until well incorporated. Stir in coconut. Place teaspoon size amounts onto cookie sheet 2-3 inches apart (dough will spread quite a bit.)

Bake for 10-12 minutes or until starting to brown.

Drizzle with melted chocolate if you like.
