Ninjabread (Gingerbread) Cookies
Gingerbread is a holiday tradition for many families. From houses to cookies, we just can’t get enough of this time honored classic. Honestly, not so much fun to make (the dough can get super sticky), but loads of fun to decorate and eat!
3 cups flour
3/4 cup unsalted butter
3/4 cup coconut palm sugar (or brown sugar)
1/2 cup molasses
1 egg
1 tsp vanilla
1/4 tsp salt
1 tsp baking soda
2 tsp ground ginger
1 tsp cinnamon
1/4 tsp nutmeg
Mix flour, baking soda, salt, ginger, cinnamon and nutmeg in bowl and set aside. Beat butter and sugar until fluffy. Add egg, molasses and vanilla and mix well. Stir in flour mixture and gently beat until well incorporated. Refrigerate for 4 hours or overnight.
Preheat oven to 350F. Line two baking pans with parchment paper.
Roll out dough on floured surface and cut into desired shapes. Place about 1-2 inches apart on cookie sheets. Bake for about 10-12 minutes or until cookies are set. Allow cookies to cool before decorating.
