Twelve Days of Cookies - Day 7

On the seventh day of Christmas, my true love baked for me…

…cookies that had chocolate and were slightly minty….

Chocolate Peppermint Squares

I am not mad about mint. I am not crazy about mint tea nor am I overly fond of Junior Mints (or any other candy like it), and I hate candy canes. However, I absolutely LOVE, LOVE, LOVE these cookies!! Strange, huh? I don’t know what it is, perhaps the buttery, chocolate flavour of the cookie offsets some of the mint flavour, but the combination of the two in this cookie tastes awesome. Even my kids who dislike mint can’t stop eating them!! I adapted this recipe from one listed in Chatelaine magazine, and have now added it to my collection of year round must make treats.

Ingredients

1/3 cup unsalted butter

3/4 cup flour

1/4 cup cocoa powder

1/2 cup sugar

1/4 tsp baking soda

1/4 tsp salt

2 Tablespoon milk

2 tsp peppermint extract

About 8 oz melted semi-sweet or dark chocolate for dipping

Preheat oven to 300F. Line two baking sheets with parchment paper and set aside.

Sift flour, cocoa, baking soda and salt in a bowl and set aside.

Beat butter and sugar until light and fluffy. Add milk and peppermint extract and mix until smooth. Stir in flour mixture and blend until combined. Roll out dough into a large rectangle.

Bake for about 25 minutes or until firm around edges. Immediately cut into squares, or any shape you like (cookies will firm up quickly once removed from oven). Cool on wire rack. Once cooled dip cookies in melted chocolate and allow to set on wax paper.
