Valentine's Truffles

I don't know anyone who will say no to chocolate, I know I never would.  These truffles are an elegant treat for your loved ones on Valentine's Day, or really any time of the year.  They are very simple to make and can be customized to suit your own personal tastes.  I adapted this recipe from one called Easy Decadent Truffles found on Allrecipes.com.

1  250 g package cream cheese, softened

3 cups confectioners sugar

3 cups semi-sweet chocolate chips

1 teaspoon orange extract*

1 teaspoon coconut extract*

For the coating

1 cup white chocolate chips

1 1/2 cups semisweet chocolate chips

shredded coconut

coloured sugar

Melt 3 cups semi-sweet chocolate chips.  Beat cream cheese with confectioners sugar until smooth.  Add melted chocolate chips and stir until incorporated.  Divide the batter into two portions.  Add the orange extract to one half and the coconut extract to the other.  Refrigerate for about one hour.   

Using a teaspoon, measure out small amounts to shape into balls. Melt the white chocolate chips in one bowl and the semi-sweet chocolate chips in another. Dip the balls in the chocolate mixtures as you like.  Top with coconut and coloured sugar, or decorate as you please.

*You can use any extract you like for flavouring.  You can also opt to use 1 1/2 tsp vanilla extract in the full amount of batter, as the original recipe states.
