On the tenth Day of Christmas, my true love baked for me……

…a yummy filled sandwich cookie…

Apricot Jam Cookies

Who doesn’t love a good sandwich - cookie that is? There is something delightful about biting into a buttery cookie only to be met by a soft, sweet centre. The last three cookies on my list are all sandwich cookies. Sandwich cookies may seem daunting to make, but I promise all the cookies I am highlighting are quite simple. This first sandwich cookie has a fruit filling, namely apricots. I happen to love apricots and apricot jam, so that is what I used, but in reality, they can be made with any fruit filling you like.

Ingredients

1 cup butter

3/4 cup sugar

2 eggs

3 cups flour

1 cup apricot jam

1 cup melted chocolate

Preheat oven to 350F. Line two baking sheets with parchment paper and set aside.

Cream butter and sugar until light and fluffy. Add in eggs and mix well. Slowly add flour and blend until well incorporated.

Shape into 1- 1/2 inch logs and cut into 1/4 inch slices. (You can also roll out dough and cut into shapes if you like, just make sure you have even matching pieces for a top and bottom). Bake for about 12-14 minutes or until bottoms start to brown. Cool completely on wire racks.

Once cooled, spread jam on underside of one cookie and top with another. Dip ends into melted chocolate and let set.
