Chocolate Splash Cookies

Nothing helps beat the January blues like chocolate.  These double chocolate cookies have a splash of white chocolate and a sprinkle of salt for that luscious blend of salty and sweet.  They are the perfect pick me up for those dreary winter days.

2 c. flour

3/4 c. cocoa powder

1 tsp baking soda

1/2 tsp salt

1 c. unsalted butter

2/3 c. white sugar

2/3 c. coconut palm sugar or brown sugar

2 eggs

 1 tsp. vanilla

 2 c. semi sweet chocolate chips

2-3 oz white chocolate

Maldon flaky sea salt

Preheat oven to 350 F.  In a separate bowl mix the flour, baking, soda, salt and cocoa powder and set aside.  Beat together the butter with the two sugars until fluffy.  Add the eggs and vanilla and mix until incorporated.  Slowly add the flour mixture and mix until combined.  Add the chocolate chips.  Use a teaspoon to drop the dough onto a cookie sheet or baking pan.  Space each dollop about two inches apart.   Bake about 11-13 minutes and let cool.  

Melt white chocolate in the microwave.  Using a fork drizzle the white chocolate over the cooled cookies and sprinkle with Maldon salt.
