Twelve Days of Cookies
The holidays are upon us and for myself (and many others) that means it’s baking season (Yay! for our tastebuds, Boo! for our waistlines…oh well…)
Growing up we always had what seemed as an unlimited supply of cookies come Christmas time. Over the years, I have tried a number of various recipes and have put together this list with some of my favourites, along with a few new ones to bring you my Twelve Days of Cookies. Be forewarned, some of these treats are addictive, and you will be baking them year round like I do! But for now, let’s just say…
….on the first day of Christmas my true love baked for me…
…a cookie made with cranberries.
White Chocolate Cranberry Cookies
1-1/2 cups flour
1/3 cup unsalted butter
1/3 cup coconut palm sugar (or brown sugar)
1/3 cup white sugar
1 egg
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1/2 cup dried cranberries
1/2 cup white chocolate chips
Preheat oven to 375F. Line two baking sheets with parchment paper and set aside.
Combine flour, salt and baking soda in a bowl and set aside.
Beat butter and both sugars until crumbly. Mix in egg and vanilla. Stir in flour mixture until well blended. Stir in cranberries and white chocolate chips.
Drop teaspoon size amounts on baking sheet about 2 inches apart. Bake for about 10-12 minutes or until slightly browned. Cool for a couple of minutes on baking tray before placing on wire racks.
You can make these sweet treats well ahead of time and put them in the freezer like I do, then pull them out when you need them!
