On the eleventh Day of Christmas, my true love baked for me…

…cookies made with Dulce de Leche…

Dulce de Leche Sandwich Cookies

The second of my sandwich cookies rounding out my list is at number 11 is a cookie I made for the very first time this year. It is extremely simple to make and incorporates a confection that I love, but don’t often use, dulce de leche. Dulce de Leche is usually prepared but slowly heating sweetened milk to create a thick substance that has the colour and flavour similar to caramel. It is very popular in South American countries but has definitely entered into mainstream desserts everywhere. Ready made cans of the confection are easily available in stores these days, making its use a breeze.

Ingredients

1-1/4 cups salted butter, softened

2 cups flour

1/2 cup sugar

1 small can dulce de leche

Confectioner’s sugar for dusting

Preheat oven to 350F. Line two baking sheets with parchment paper and set aside.

In a bowl combine the butter, flour and sugar and mix using hands until it forms a smooth dough. Divide dough into three parts and roll each one out into 1-1/2 inch logs. Cut into 1/4 inch slices and bake for about 15 minutes or until bottoms begin to brown. Allow to cool completely.

Spread dulce de leche on the bottom of one cookie and top with another. Dust with confectioners sugar.
